Teffola founder, Claire, was introduced to Karen through an amazingly perceptive Zingerman's Coffee employee. She heard that Claire was working on starting a gluten free mill and knew that Karen was an exceptionally good gluten free baker - it was fate! We met up and, like any good partnership, there was really good chemistry and shared values. At some point someone said "it would be interesting to make something with the flour from the mill". 

More than 75 pounds of buckwheat flour, countless pounds of butter and various forms of sugar later, the ever discerning folks at Zingerman's officially approved a single cookie flavor. The journey was not without it's bumps and disappointments (and a lot of money spent on test runs) but both of us are so glad because the process led us to truly the best formula. Through it all, our relationship grew stronger than ever thanks to matching strengths and grace through the busy seasons. Between Karen's unmatched determination in recipe development and Claire's understanding of what it takes to launch a brand, North Coast Baking Co was crafted.
