Midwestern Bircher Muesli

Ingredients

3/4 cup rolled oats

2 Tablespoons buckwheat groats

2 Tablespoons whole teff grain

1/3 cup roughly chopped almonds

1/4 cup shredded coconut

1/8 teaspoon cinnamon

2 Tablespoons sunflower seeds

1 large apple (our favorite is Gala)

1/3 cup Greek yogurt (or plant based yogurt to make it vegan)

1/4 cup milk of your choice (optional)

To Serve

lemon & fresh fruit

Method

  1. Mix all the dry ingredients in medium sized bowl

  2. Wash and grate the apple (don’t peel it) on a plate to save the juice

  3. Add grated apple, it’s juice and yogurt to the bowl with the dry ingredients and thoroughly mix until everything is coated. If it looks a little dry add another scoop of yogurt or the milk

  4. Let it sit in the fridge overnight. To serve, add a squeeze of lemon and fresh fruit.

 

Note: coating the buckwheat groats and sunflower seeds begins the sprouting process! And the lemon the next morning helps brighten up the flavor; don’t skip this step :) 

2-3 servings, keep in fridge and consume within 3 days
